| Note | F++/+++. The M. hirasei is smoother and finer than the M. beyrichii and a great asset for collectors. Today, the hirasei is mainly caught between Japan and Taiwan. A few years ago, China changed fishing techniques to protect its fishing grounds. As a result, all Chinese deep-sea mussels are now rapidly disappearing from the market, which is why they are becoming increasingly rare on the market.
